Holiday's are always a hard time for me to be away from my family.  While we aren't a particularly close family, we did always come together around holiday's and spend time together.  Being 3000+ miles away obviously inhibits that from happening.

An Easter tradition in my immediate family is to go to Swenson's for lunch.  This started when my sister Kristina would give up ice cream for lent, and then want only the best on Easter when she could indulge again.  Not sure if they are doing it this year, but I wish I was there to make sure they did!  My favorite lunch from there is the sourdough cheeseburger, it's crusted grilled using a parmesan spread that's to die for!  Their fries are also amazing... thick cut steak house style fries, that my family always leaves to eat with our ice cream.  There's just something about the soft potato inside and the crispy fry exterior mixed with the sweet ice cream that's a match made in heaven.  Oh, I miss that place.

We won't be alone today though.  We're going over to a friend's house to participate in her family's Easter brunch.  We were also there for Christmas Eve.  These are good friends and we're lucky to have met them and become close to them since moving here.  I'm making my delicious mac-n-cheese to take, and I'm looking forwards to lots of yummy food, and good times with friends.

Later Jessy and I are going to go to a movie, I think we're going to start our own Easter tradition of going to a movie on Easter.  We're either going to see G.I. Joe: Retaliation or Olympus has Fallen.  Which one we see will depend on what time we are done with brunch.

Even though I don't have kids, I kind of also want to decorate some easter eggs... I'm going to see if I can talk Jessy into going to buy a kit later today, after the movie.  I'll post up pics if we do.

Not deleting the past; decisions for the future; moving forward

I thought about deleting all the old posts I have on here,  and "starting fresh"... but that's not really a fresh start is it?  Sure, the past wouldn't be here, for anyone to see if they are looking, but it's still with me, still haunting me, so best to make peace with it and let it lay in the past. So here I am, 3.5 years after my last post and approx 30 lbs heavier. I made a decision last week, to have bariatric surgery.  I've decided to do it in the past, 15 years ago, but I switched insurance companies and it was no longer covered.  I thought that was the end of the bariatric road.  Someone recently suggested that I do it - I told them the insurance thing - and they suggested something that no one had mentioned before, and it never occurred to me.  Pay for it myself. Kale Chips!

Why have I not discovered these before?  Oh the amount of kale that has gone to waste this summer that I did not use in my morning smoothies in time and it went bad. I've heard of homemade kale chips for a long time, probably a couple of years, but I didn't know how easy they were to make until a few months ago.  I'm not sure why I didn't try to make them before, maybe because it was too hot to turn on the oven, maybe I'm forgetful and would just forget, or maybe it was some other reason. But today everything changed.  I got a bunch of kale in my CSA box today and I immediately came home, looked up some recipes for inspiration on Pintrest, then did a little of each that sounded best... and made two batches (the bunch of kale was pretty big). Updates

A lot has changed in the past year. We moved from Oregon back to Florida.  I feel like a person split between two homes.  I love being back near my family, and I enjoy working in the location I'm in now, but, I miss the life I had, and the people who were in my life back in Oregon.  We haven't found our niche here. We did something we've always wanted to do - we became Disney Annual Passholders.  I love it.  We've already used our passes several times in the few months since we've gotten them and have two more trips planned in the next two months or so.  It feels great to be in a place in our lives that we can do something like this, when it seemed so far out of our reach a few years ago.
